Combining the natural sweetness of sweet potatoes with the hearty texture of black beans, these burritos are wrapped in a whole wheat tortilla and flavored with vibrant spices. They’re a healthy, satisfying meal that’s easy to make and packed with flavor.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (400 grams) black beans, drained and rinsed
  • 4 whole wheat tortillas
  • 1 avocado, sliced
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: shredded cheese, sour cream, cilantro for garnish

Directions

  1. Preheat your oven to 200°C (400°F). Toss the diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
  2. In a large bowl, mix the roasted sweet potatoes with the black beans. Mash some of the sweet potatoes and beans together for a varied texture.
  3. Warm the whole wheat tortillas in a skillet or in the microwave for a few seconds to make them pliable.
  4. Lay out the tortillas and divide the sweet potato and black bean mixture among them. Add slices of avocado and a spoonful of salsa to each.
  5. If using, sprinkle shredded cheese over the filling. Fold in the sides of the tortillas and roll them up tightly to form the burritos.
  6. Optional: For a toasted finish, place the burritos in a skillet over medium heat and cook for a few minutes on each side until crisp.
  7. Serve the burritos warm, garnished with sour cream and cilantro if desired.
