Slow-cooked to perfection, the beef becomes tender and succulent, infused with the aromas of herbs and spices. Paired with potatoes, this dish is a fulfilling and delicious meal ideal for a family dinner or a cozy gathering.

Ingredients

  • 1 kg beef chuck roast, cut into large chunks
  • 4 large potatoes, peeled and quartered
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Preheat your oven to 160°C (325°F).
  2. Season the beef chunks with salt and pepper. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat and brown the beef on all sides. Remove the beef and set aside.
  3. In the same pot, add the chopped onion and garlic, sautéing until softened.
  4. Stir in the tomato paste, dried oregano, and dried basil, cooking for a minute.
  5. Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot.
  6. Return the beef to the pot and add the quartered potatoes. Bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Braise for about 2-3 hours, or until the beef is tender and the potatoes are cooked.
  8. Garnish with fresh parsley before serving.
