Ingredients

  • 1 large head of cauliflower, riced
  • 1 cup frozen peas and carrots mix
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Directions

  1. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the diced onion and minced garlic. Sauté until the onions become translucent.
  2. Add the riced cauliflower to the skillet. Stir-fry the cauliflower for about 5 minutes, until it is tender.
  3. Push the cauliflower to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are cooked through, then mix them into the cauliflower.
  4. Add the frozen peas and carrots to the skillet. Stir everything together and cook until the vegetables are heated through.
  5. Drizzle the soy sauce over the cauliflower mixture. Stir to combine everything well. Season with salt and pepper to taste.
  6. Cook for an additional 2-3 minutes, stirring frequently.
  7. Garnish with sliced green onions before serving.
