  • 1 1/2 cups all-purpose flour

  • Optional: 1/2 cup raisins or chocolate chips


  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×4 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, beat together the sugar, oil, eggs, and vanilla extract until well blended.
  4. Stir the dry ingredients into the wet ingredients, mixing just until combined.
  5. Fold in the grated zucchini, and if using, the nuts, raisins, or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve the zucchini bread.
