Directions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×4 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, beat together the sugar, oil, eggs, and vanilla extract until well blended.
- Stir the dry ingredients into the wet ingredients, mixing just until combined.
- Fold in the grated zucchini, and if using, the nuts, raisins, or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve the zucchini bread.
