  • 3 medium beets, peeled and grated
  • 2 tablespoons vegetable oil

  • 2 carrots, peeled and grated
  • 1/2 head of cabbage, shredded
  • 2 large potatoes, peeled and diced
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 6 cups beef or chicken broth
  • 1 pound beef, pork, or chicken, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon sugar
  • 2 tablespoons vinegar
  • Salt and pepper to taste
  • Sour cream and fresh dill for serving


  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, carrots, and minced garlic, cooking until the vegetables are softened.
  2. Add the meat to the pot and cook until browned.
  3. Pour in the broth and bring to a boil. Add the diced potatoes, grated beets, bay leaf, sugar, and vinegar. Reduce heat, cover, and simmer for about 20 minutes.
  4. Stir in the shredded cabbage and diced tomatoes with their juice. Continue to simmer the soup until all the vegetables are tender, about 15 more minutes.
  5. Season the soup with salt and pepper to taste.
  6. Remove the bay leaf before serving.
  7. Serve the borscht hot, with a dollop of sour cream and a sprinkle of fresh dill on top.
