Ingredients

  • 1 can (14 ounces) coconut milk
  • 2 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 cup mushrooms, sliced (shiitake or button mushrooms work well)
  • 1 stalk lemongrass, cut into 2-inch pieces and smashed
  • 3 kaffir lime leaves (or substitute with 1 tablespoon lime zest)
  • 3 slices galangal (or substitute with ginger)
  • 2 Thai chilies, sliced (adjust to taste)
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Optional: 1 red bell pepper, thinly sliced
  • Optional: Thai basil leaves for garnish
