Sticky Toffee Pudding is a classic British dessert consisting of a moist sponge cake made with finely chopped dates and covered in a rich toffee sauce. It’s a decadent and comforting treat, perfect for any occasion.

For the Cake:

  • 1 cup dates, pitted and finely chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Toffee Sauce:

  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a small bowl, combine the chopped dates, boiling water, and baking soda. Set aside and let it sit for about 10 minutes.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually mix in the flour mixture. Stir in the date mixture (including the water) until well combined.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. While the cake is baking, prepare the toffee sauce. In a saucepan over medium heat, combine the heavy cream, butter, brown sugar, and vanilla extract. Bring to a boil, then reduce the heat and simmer for about 5 minutes, stirring occasionally, until the sauce thickens.
  9. Once the cake is done, let it cool slightly in the pan. Then poke holes all over the cake with a skewer.
  10. Pour about half of the warm toffee sauce over the cake, allowing it to soak in.
  11. Serve the sticky toffee pudding warm, drizzled with the remaining toffee sauce.
  12. Optional: Serve with vanilla ice cream or whipped cream for an added indulgence.
