  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss the beef and kidney pieces with flour, salt, and pepper until coated.
  3. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Brown the meat in batches, ensuring not to crowd the pan. Set browned meat aside.
  4. In the same skillet, add the onion (and carrots and mushrooms if using). Sauté until softened. Add the garlic and cook for another minute.
  5. Return the browned meat to the skillet. Add the beef broth, stout or ale, Worcestershire sauce, thyme, and bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the meat is tender. Adjust seasoning with salt and pepper.
  6. Remove the bay leaves and let the filling cool slightly. If the sauce is too thin, you can thicken it with a mixture of flour and water.
  7. On a floured surface, roll out the puff pastry to fit the top of your pie dish.
  8. Spoon the filling into a pie dish. Cover with the rolled-out pastry, crimping the edges to seal. Cut a small slit in the center to allow steam to escape.
  9. Brush the pastry with the beaten egg for a golden finish.
