Spinach Quiche is a savory and elegant dish, perfect for breakfast, brunch, or a light dinner. This recipe features a creamy spinach filling inside a buttery crust, making it a delightful treat.

Ingredients

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3-4 tablespoons ice water

For the Filling:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 package (10 ounces) frozen spinach, thawed and well-drained
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup grated Gruyère or Swiss cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Begin with the crust: In a large bowl, combine flour and salt. Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, stirring until the dough comes together. Form into a ball, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. On a floured surface, roll out the dough to fit a 9-inch pie dish. Place the dough in the dish and press it into the bottom and sides. Trim any excess dough from the edges.
  5. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened. Add the drained spinach and cook for another 2-3 minutes. Remove from heat and let cool slightly.
  6. In a bowl, whisk together the eggs and heavy cream. Stir in the grated cheese, nutmeg, salt, and pepper.
  7. Spread the spinach mixture evenly over the crust. Pour the egg and cream mixture over the spinach.
  8. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the crust is golden brown.
  9. Remove from the oven and let cool slightly before serving.
  10. Serve the spinach quiche warm, cut into slices.
