  • 3 lbs beef chuck roast
  • 1 packet Italian salad dressing mix (dry)
  • 1 cup beef broth
  • 1/2 cup pepperoncini peppers, plus extra for serving
  • 1/2 cup banana peppers
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 6-8 crusty sandwich rolls
  • Provolone cheese slices


  1. Season the beef chuck roast with salt, pepper, and the Italian salad dressing mix. Place it in the slow cooker.
  2. Add the beef broth, pepperoncini peppers, banana peppers, sliced onion, minced garlic, oregano, basil, and red pepper flakes to the slow cooker.
  3. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is very tender.
  4. Once the beef is cooked, shred it using two forks and stir well to mix with the cooking liquid and vegetables.
