  • 8 ounces linguine or spaghetti
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper to taste
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup unsalted butter
  • 1/4 cup fresh parsley, chopped
  • Optional: Red pepper flakes for heat
  • Optional: Grated Parmesan cheese for serving


  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
  4. Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and let it cook for 2-3 minutes.
  5. Reduce the heat to low and stir in the lemon zest and butter until the butter is melted and the sauce is emulsified.
  6. Return the cooked shrimp to the skillet. Add the cooked pasta and toss everything together until the pasta is coated in the sauce and the shrimp are evenly distributed.
  7. Stir in the chopped parsley (and red pepper flakes if using).
  8. Serve the shrimp scampi immediately, optionally topped with grated Parmesan cheese.
