Ingredients
- 8 ounces linguine or spaghetti
- 2 tablespoons olive oil

- Juice of 1 lemon
- Zest of 1 lemon

Directions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
- Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and let it cook for 2-3 minutes.

- Return the cooked shrimp to the skillet. Add the cooked pasta and toss everything together until the pasta is coated in the sauce and the shrimp are evenly distributed.
- Stir in the chopped parsley (and red pepper flakes if using).
- Serve the shrimp scampi immediately, optionally topped with grated Parmesan cheese.
