Shakshuka with Feta, Olives, and Peppers is a flavorful and colorful dish that combines poached eggs in a hearty tomato sauce with the richness of feta cheese, the tanginess of olives, and the sweetness of peppers. It’s a perfect meal for breakfast, brunch, or even dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (28 oz) crushed tomatoes
  • Salt and pepper, to taste
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 4-6 large eggs
  • Fresh parsley or cilantro, chopped for garnish

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onions and bell peppers. Cook, stirring occasionally, until the vegetables are soft, about 5-7 minutes.
  2. Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for another 1-2 minutes, until fragrant.
  3. Pour in the crushed tomatoes. Season with salt and pepper. Simmer the sauce for 10-15 minutes, or until it thickens slightly.
  4. Stir in the Kalamata olives and half of the crumbled feta cheese.
  5. Create small wells in the sauce with a spoon and gently crack the eggs into each well. Season the eggs with a little salt and pepper.
  6. Cover the skillet with a lid and cook until the egg whites are set but the yolks are still runny, about 5-8 minutes. Adjust the cooking time if you prefer your eggs more or less done.
  7. Once the eggs are cooked to your liking, sprinkle the remaining feta cheese over the top.
  8. Garnish with chopped parsley or cilantro.
  9. Serve the Shakshuka warm, directly from the skillet. It pairs well with crusty bread or pita for dipping into the sauce.
