Ingredients
- 2 tablespoons olive oil

- 1 red bell pepper, chopped

- Heat the olive oil in a large skillet over medium heat. Add the chopped onions and bell peppers. Cook, stirring occasionally, until the vegetables are soft, about 5-7 minutes.
- Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for another 1-2 minutes, until fragrant.
- Pour in the crushed tomatoes. Season with salt and pepper. Simmer the sauce for 10-15 minutes, or until it thickens slightly.
- Stir in the Kalamata olives and half of the crumbled feta cheese.
- Create small wells in the sauce with a spoon and gently crack the eggs into each well. Season the eggs with a little salt and pepper.
- Cover the skillet with a lid and cook until the egg whites are set but the yolks are still runny, about 5-8 minutes. Adjust the cooking time if you prefer your eggs more or less done.
- Once the eggs are cooked to your liking, sprinkle the remaining feta cheese over the top.
