  2. Add the warm milk, melted butter, and egg to the dry ingredients. Mix until a soft dough forms. Gradually add the remaining flour until the dough is no longer sticky.
  3. Knead the dough on a floured surface for about 5 minutes, then place it in a greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.
  4. Meanwhile, prepare the filling. In a saucepan, combine the ground poppy seeds, chopped walnuts, honey or sugar, milk, cinnamon, and lemon zest. Cook over low heat, stirring frequently, until the mixture thickens. Set aside to cool.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Punch down the risen dough and roll it out on a floured surface into a rectangle, about 1/4-inch thick.
  7. Spread the poppy seed and walnut filling evenly over the dough, leaving a small border around the edges.
  8. Roll the dough tightly from the long side, like a jelly roll. Pinch the seams to seal and place the roll seam-side down on the prepared baking sheet.
  9. Mix the beaten egg with water to make the egg wash. Brush the top of the roll with the egg wash.
  10. Bake for 30-35 minutes, or until the roll is golden brown and sounds hollow when tapped.
