This Plantain Frittata combines the sweetness of ripe plantains with the savory flavors of tomatoes, scallions, and bell peppers. It’s a delightful and nutritious dish that works perfectly for breakfast, brunch, or even a light dinner.


For the Frittata:

  • 6 large eggs
  • 1/2 cup milk
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 scallions, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 fresh tomatoes, diced
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon cayenne pepper (optional)

For the Sweet Plantains:

  • 2 ripe yellow plantains, peeled and sliced into rounds
  • 2 tablespoons vegetable oil
  • Pinch of salt


  1. Preheat your oven to 350°F (175°C).
  2. Start with the sweet plantains. Heat the vegetable oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides. Remove from the skillet and set aside on paper towels to drain excess oil. Sprinkle with a pinch of salt.
  3. In the same skillet, add the olive oil and sauté the onion, scallions, red and green bell peppers, and garlic until soft and fragrant, about 5-7 minutes.
  4. Add the diced tomatoes and cook for another 3-4 minutes. Season with salt, pepper, paprika, and cayenne pepper if using.
  5. In a large bowl, whisk together the eggs and milk. Season with a bit more salt and pepper.
  6. Pour the egg mixture into the skillet with the vegetables. Cook over medium heat until the edges begin to set, about 2-3 minutes.
  7. Arrange the fried plantain slices on top of the egg mixture.
  8. Transfer the skillet to the preheated oven. Bake the frittata for 15-20 minutes, or until the eggs are set and the top is slightly golden.
  9. Remove from the oven and let it cool for a few minutes before serving.
