Ingredients
For the Frittata:
- 6 large eggs
- 1/2 cup milk
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 scallions, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 fresh tomatoes, diced

- Preheat your oven to 350°F (175°C).
- Start with the sweet plantains. Heat the vegetable oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides. Remove from the skillet and set aside on paper towels to drain excess oil. Sprinkle with a pinch of salt.
- In the same skillet, add the olive oil and sauté the onion, scallions, red and green bell peppers, and garlic until soft and fragrant, about 5-7 minutes.
- Add the diced tomatoes and cook for another 3-4 minutes. Season with salt, pepper, paprika, and cayenne pepper if using.
- In a large bowl, whisk together the eggs and milk. Season with a bit more salt and pepper.
- Pour the egg mixture into the skillet with the vegetables. Cook over medium heat until the edges begin to set, about 2-3 minutes.
- Arrange the fried plantain slices on top of the egg mixture.
- Transfer the skillet to the preheated oven. Bake the frittata for 15-20 minutes, or until the eggs are set and the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
