This Pasta with Tomato, Spinach, Basil, and Brie is a delightful and easy-to-make dish that’s perfect for a quick, flavorful meal. The creaminess of the Brie, combined with the freshness of the tomatoes, spinach, and basil, creates a light yet satisfying pasta dish.
Ingredients
- 12 oz pasta (such as penne, fusilli, or spaghetti)
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach leaves
- 1 cup Brie cheese, rind removed and cubed
- 1/2 cup fresh basil leaves, chopped
- 3 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
- Optional: red pepper flakes for a spicy kick
- Optional: grated Parmesan cheese for serving
Directions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain the pasta and reserve 1/2 cup of the pasta water.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet. Cook for 3-4 minutes until the tomatoes start to soften.
- Add the fresh spinach to the skillet and cook until just wilted, about 1-2 minutes.
- Reduce the heat to low. Add the cooked pasta, cubed Brie cheese, and chopped basil to the skillet. Gently toss everything together until the Brie starts to melt and coat the pasta. If the pasta seems too dry, add a little of the reserved pasta water to reach your desired consistency.
- Season the pasta with salt, pepper, and red pepper flakes (if using).
- Serve the pasta warm, garnished with grated Parmesan cheese if desired.
