Ingredients
For the Cake:
- 1 cup mulled wine (see instructions below or use pre-made)
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed

- 2 cups all-purpose flour
- 1/2 teaspoon baking soda

- 2 cinnamon sticks
- 3 cloves
- 2 star anise
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons mulled wine or milk
Directions
- If making mulled wine from scratch: In a pot, combine all the mulled wine ingredients. Heat over low heat for about 20 minutes. Do not boil. Strain and set aside 1 cup for the cake.
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch bundt pan.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- Gradually add the dry ingredients to the wet ingredients, alternating with the mulled wine, starting and ending with the flour mixture.
- Pour the batter into the prepared bundt pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- For the glaze: In a small bowl, mix the powdered sugar with enough mulled wine or milk to achieve a pourable consistency.
- Drizzle the glaze over the cooled cake.
