Ingredients

  • 4 large eggs

  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon black pepper powder

Directions

  1. In a bowl, beat the eggs well.
  2. Add the grated coconut, chopped onion, green chilies, grated ginger, chopped cilantro, turmeric powder, black pepper powder, and salt to the beaten eggs. Mix well to combine.
  3. Heat the coconut oil in a non-stick frying pan over medium heat.
  4. Pour half of the egg mixture into the pan. Tilt the pan slightly to spread the mixture evenly.
  5. Cook for 2-3 minutes until the bottom of the omelette is set and lightly golden. Flip the omelette and cook for an additional 2 minutes on the other side.
  6. Transfer the omelette to a plate.
  7. Repeat with the remaining egg mixture to make a second omelette.
  8. Serve the Motta Porichathu hot, ideally with a side of Indian bread like chapati or as is.
