Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup salsa (medium or hot, depending on preference)
  • 1 can (15 ounces) chili beans in sauce, undrained
  • 2 cups crushed tortilla chips
  • 1 cup black olives, sliced
  • 1/2 cup green onions, chopped
  • 1 large tomato, diced
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1 teaspoon ground cumin or taco seasoning

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef, chopped onion, and minced garlic over medium heat until the beef is browned and the onions are soft. Drain any excess fat.
  3. Stir in the salsa, chili beans, salt, pepper, and optional cumin or taco seasoning. Cook for an additional 5 minutes to blend the flavors.
  4. Place half of the crushed tortilla chips at the bottom of the prepared baking dish.
  5. Spread half of the beef and bean mixture over the chips. Sprinkle half of the shredded cheddar cheese over the top.
  6. Repeat the layers with the remaining chips, beef and bean mixture, and cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is melted.
  8. Remove from the oven and top with the sliced black olives, chopped green onions, and diced tomato.
  9. Let the casserole sit for a few minutes before serving.
