Kimchi Avocado Quesadilla is a fusion dish that combines the bold flavors of Korean kimchi with creamy avocado, all melted together with cheese in a crispy tortilla. This dish is perfect for a quick, flavorful lunch or a fun, unconventional dinner.

  • 4 large flour tortillas
  • 1 cup kimchi, chopped
  • 1 ripe avocado, sliced
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/2 red onion, thinly sliced
  • 1 tablespoon olive oil or butter (for cooking)
  • Optional: Sriracha sauce or other hot sauce for serving
  • Optional: Sour cream or Greek yogurt for serving

  1. Drain any excess liquid from the kimchi.
  2. Lay out the flour tortillas on a flat surface. On one half of each tortilla, evenly distribute the kimchi, avocado slices, red onion, and shredded cheese.
  3. Fold the other half of each tortilla over the filling to form a half-moon shape.
  4. Heat a teaspoon of olive oil or butter in a large skillet over medium heat.
  5. Place one or two quesadillas in the skillet, depending on the size of your skillet. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and crispy and the cheese has melted.
  6. Transfer the cooked quesadillas to a cutting board. Repeat with the remaining quesadillas, adding more oil or butter to the skillet as needed.
  7. Cut the quesadillas into wedges.
  8. Optional: Serve with a side of sriracha sauce or sour cream for dipping.
  9. Enjoy your Kimchi Avocado Quesadillas while hot!
