Kimchi Avocado Quesadilla is a fusion dish that combines the bold flavors of Korean kimchi with creamy avocado, all melted together with cheese in a crispy tortilla. This dish is perfect for a quick, flavorful lunch or a fun, unconventional dinner.
Ingredients
- 4 large flour tortillas
- 1 cup kimchi, chopped
- 1 ripe avocado, sliced
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/2 red onion, thinly sliced
- 1 tablespoon olive oil or butter (for cooking)
- Optional: Sriracha sauce or other hot sauce for serving
- Optional: Sour cream or Greek yogurt for serving
Directions
- Drain any excess liquid from the kimchi.
- Lay out the flour tortillas on a flat surface. On one half of each tortilla, evenly distribute the kimchi, avocado slices, red onion, and shredded cheese.
- Fold the other half of each tortilla over the filling to form a half-moon shape.
- Heat a teaspoon of olive oil or butter in a large skillet over medium heat.
- Place one or two quesadillas in the skillet, depending on the size of your skillet. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and crispy and the cheese has melted.
- Transfer the cooked quesadillas to a cutting board. Repeat with the remaining quesadillas, adding more oil or butter to the skillet as needed.
- Cut the quesadillas into wedges.
- Optional: Serve with a side of sriracha sauce or sour cream for dipping.
- Enjoy your Kimchi Avocado Quesadillas while hot!
