Ingredients
- 8 large eggs
- 1 cup kale, finely chopped
- 1 cup mushrooms, finely chopped
- 1/2 cup onion, finely diced
- 1/2 cup shredded cheese (cheddar, Swiss, or a blend)
- 1/4 cup milk
- 1 garlic clove, minced
- Salt and pepper, to taste
- Non-stick cooking spray or olive oil
- Optional: red pepper flakes or herbs for added flavor
Directions
- Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick cooking spray or olive oil.
- Heat a small skillet over medium heat. Add a little olive oil and sauté the onions and garlic until translucent, about 3-4 minutes.
- Add the chopped mushrooms and cook until they are soft and their moisture has evaporated, about 5 minutes. Add the kale and cook until it is wilted, about 2 minutes. Season with salt, pepper, and optional red pepper flakes or herbs. Remove from heat and let it cool slightly.
- In a large bowl, whisk together the eggs and milk. Add the cooled vegetable mixture and the shredded cheese. Stir to combine.
- Spoon the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Remove the egg bites from the oven and let them cool for a few minutes before removing them from the muffin tin.
