Ingredients

  • 8 large eggs
  • 1 cup kale, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 cup onion, finely diced
  • 1/2 cup shredded cheese (cheddar, Swiss, or a blend)
  • 1/4 cup milk
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Non-stick cooking spray or olive oil

Directions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick cooking spray or olive oil.
  2. Heat a small skillet over medium heat. Add a little olive oil and sauté the onions and garlic until translucent, about 3-4 minutes.
  3. Add the chopped mushrooms and cook until they are soft and their moisture has evaporated, about 5 minutes. Add the kale and cook until it is wilted, about 2 minutes. Season with salt, pepper, and optional red pepper flakes or herbs. Remove from heat and let it cool slightly.
  4. In a large bowl, whisk together the eggs and milk. Add the cooled vegetable mixture and the shredded cheese. Stir to combine.
  5. Spoon the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
