Ingredients

  • 2 tablespoons olive oil
  • 1 pound andouille sausage, sliced into rounds

  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, with juice

Directions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the andouille sausage and cook until browned. Remove the sausage and set it aside.
  2. In the same pot, add the chicken pieces. Season with salt and pepper. Cook until browned on all sides. Remove the chicken and set aside with the sausage.
  3. Add the onion, bell pepper, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
  4. Add the minced garlic, diced tomatoes with their juice, paprika, cayenne pepper, thyme, oregano, and bay leaves. Stir well to combine.
  5. Stir in the white rice and chicken broth. Bring the mixture to a boil.
  6. Reduce the heat to low. Add the cooked sausage and chicken back to the pot. Cover and simmer for 20-25 minutes, or until the rice is almost cooked through.
  7. Add the shrimp to the pot, stirring it into the rice mixture. Cover and cook for another 5-10 minutes, or until the shrimp is pink and cooked through.
  8. Remove the pot from heat. Discard the bay leaves. Adjust salt and pepper to taste.
  9. Garnish with chopped green onions and serve with hot sauce if desired.
