Ingredients
- 2 tablespoons olive oil
- 1 pound andouille sausage, sliced into rounds
- 1 pound chicken breast, cut into bite-sized pieces
- 1 large onion, chopped
- 1 bell pepper, chopped (any color)
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, with juice
- 1 teaspoon paprika

- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 bay leaves
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth

Directions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the andouille sausage and cook until browned. Remove the sausage and set it aside.
- In the same pot, add the chicken pieces. Season with salt and pepper. Cook until browned on all sides. Remove the chicken and set aside with the sausage.
- Add the onion, bell pepper, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
- Add the minced garlic, diced tomatoes with their juice, paprika, cayenne pepper, thyme, oregano, and bay leaves. Stir well to combine.
- Stir in the white rice and chicken broth. Bring the mixture to a boil.
- Reduce the heat to low. Add the cooked sausage and chicken back to the pot. Cover and simmer for 20-25 minutes, or until the rice is almost cooked through.
- Add the shrimp to the pot, stirring it into the rice mixture. Cover and cook for another 5-10 minutes, or until the shrimp is pink and cooked through.
- Remove the pot from heat. Discard the bay leaves. Adjust salt and pepper to taste.
- Garnish with chopped green onions and serve with hot sauce if desired.
