Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 3 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup Guinness beer or any stout (optional, can be replaced with more beef broth)
- 3 carrots, peeled and sliced
- 3 potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Directions
- Toss the beef cubes with the flour, salt, and pepper.
- Turn on the Instant Pot and select the ‘Sauté’ function. Heat 2 tablespoons of olive oil and brown the beef in batches. Set the browned beef aside.
- Add the remaining tablespoon of olive oil to the Instant Pot. Sauté the onion and garlic until the onion is translucent.
- Add the beef back into the Instant Pot. Pour in the beef broth and Guinness beer. Stir well, scraping up any browned bits from the bottom.
- Add the carrots, potatoes, celery, thyme, rosemary, and bay leaves to the pot. Stir to combine.
- Close the lid of the Instant Pot and set the valve to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 35 minutes on high pressure.
- Once the cooking time is up, let the pressure release naturally for 10 minutes, then carefully turn the valve to ‘Venting’ to release any remaining pressure.
- Open the lid and remove the bay leaves. Adjust seasoning with salt and pepper if necessary.
- Serve the stew hot, garnished with fresh parsley.
