Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness beer or any stout (optional, can be replaced with more beef broth)
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Directions

  1. Toss the beef cubes with the flour, salt, and pepper.
  2. Turn on the Instant Pot and select the ‘Sauté’ function. Heat 2 tablespoons of olive oil and brown the beef in batches. Set the browned beef aside.
  3. Add the remaining tablespoon of olive oil to the Instant Pot. Sauté the onion and garlic until the onion is translucent.
  4. Add the beef back into the Instant Pot. Pour in the beef broth and Guinness beer. Stir well, scraping up any browned bits from the bottom.
  5. Add the carrots, potatoes, celery, thyme, rosemary, and bay leaves to the pot. Stir to combine.
  6. Close the lid of the Instant Pot and set the valve to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 35 minutes on high pressure.
  7. Once the cooking time is up, let the pressure release naturally for 10 minutes, then carefully turn the valve to ‘Venting’ to release any remaining pressure.
  8. Open the lid and remove the bay leaves. Adjust seasoning with salt and pepper if necessary.
  9. Serve the stew hot, garnished with fresh parsley.
