Ingredients

  • 3 tablespoons sugar

Directions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-15 minutes. Drain the potatoes and set them aside.
  2. In a skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside on a paper towel to drain. Reserve about 3 tablespoons of bacon fat in the skillet.
  3. In the same skillet with the bacon fat, sauté the chopped onion until translucent and slightly browned.
  4. Stir in the white vinegar, water, sugar, salt, and pepper. Bring the mixture to a simmer.
  5. Add the mustard to the skillet and stir to combine.
  6. Add the cooked potatoes to the skillet, gently folding them into the dressing to coat them evenly.
  7. Cook the potato mixture for an additional 5 minutes on low heat, stirring occasionally.
  8. Remove from heat and mix in the cooked bacon and chopped parsley.
  9. Serve the potato salad warm.
