Ingredients
- 2 pounds small red or yellow potatoes, scrubbed and cut into bite-sized pieces
- 6 slices bacon, chopped
- 1 medium onion, finely chopped

- 2 tablespoons water
- 3 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Directions
- Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-15 minutes. Drain the potatoes and set them aside.
- In a skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside on a paper towel to drain. Reserve about 3 tablespoons of bacon fat in the skillet.
- In the same skillet with the bacon fat, sauté the chopped onion until translucent and slightly browned.
- Stir in the white vinegar, water, sugar, salt, and pepper. Bring the mixture to a simmer.
- Add the mustard to the skillet and stir to combine.
- Add the cooked potatoes to the skillet, gently folding them into the dressing to coat them evenly.
- Cook the potato mixture for an additional 5 minutes on low heat, stirring occasionally.
- Remove from heat and mix in the cooked bacon and chopped parsley.
- Serve the potato salad warm.
