Ingredients
- 4 large flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 2 ripe avocados, mashed
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/2 red onion, finely chopped
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- 2 tablespoons fresh cilantro, chopped (optional)
- 1 tablespoon olive oil or butter (for cooking)
- Optional: sour cream, salsa, or hot sauce for serving
Directions
- In a bowl, mix the mashed avocados, black beans, red onion, cumin, salt, and pepper. Stir in the cilantro if using.
- Lay out the flour tortillas on a flat surface. Spread the avocado and black bean mixture over half of each tortilla. Sprinkle the shredded cheese on top of the mixture.
- Fold the tortillas in half over the filling to create a half-moon shape.
- Heat a teaspoon of olive oil or butter in a large skillet over medium heat. Place one or two quesadillas in the skillet (depending on size) and cook for about 2-3 minutes on each side, or until golden brown and the cheese has melted.
- Repeat with the remaining quesadillas, adding more oil or butter to the skillet as needed.
- Cut the quesadillas into wedges and serve with sour cream, salsa, or hot sauce if desired.
