This Creamy One-Pot Pasta with Zucchini is a simple, delicious, and convenient dish perfect for a quick weeknight dinner. It’s made in just one pot for minimal cleanup and combines pasta with fresh zucchini in a creamy sauce.

  • 12 oz pasta (such as fettuccine, penne, or spaghetti)
  • 2 medium zucchinis, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: red pepper flakes, to taste
  • Optional: fresh basil or parsley, chopped for garnish

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  2. Add the sliced zucchini to the pot. Cook, stirring occasionally, until the zucchini starts to soften, about 5 minutes.
  3. Add the pasta to the pot. Pour in the vegetable broth and heavy cream. Stir to combine all the ingredients.
  4. Bring the mixture to a boil. Reduce the heat to a simmer and cover the pot. Let it cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  5. Remove the pot from heat. Stir in the grated Parmesan cheese until it’s melted and the sauce is creamy. Season with salt, pepper, and red pepper flakes (if using).
  6. Let the pasta sit for a few minutes to thicken.
  7. Garnish with fresh basil or parsley before serving.
  8. Serve the Creamy One-Pot Pasta with Zucchini warm.
