This Creamy One-Pot Pasta with Zucchini is a simple, delicious, and convenient dish perfect for a quick weeknight dinner. It’s made in just one pot for minimal cleanup and combines pasta with fresh zucchini in a creamy sauce.
Ingredients
- 12 oz pasta (such as fettuccine, penne, or spaghetti)
- 2 medium zucchinis, sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: red pepper flakes, to taste
- Optional: fresh basil or parsley, chopped for garnish
Directions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the sliced zucchini to the pot. Cook, stirring occasionally, until the zucchini starts to soften, about 5 minutes.
- Add the pasta to the pot. Pour in the vegetable broth and heavy cream. Stir to combine all the ingredients.
- Bring the mixture to a boil. Reduce the heat to a simmer and cover the pot. Let it cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
- Remove the pot from heat. Stir in the grated Parmesan cheese until it’s melted and the sauce is creamy. Season with salt, pepper, and red pepper flakes (if using).
- Let the pasta sit for a few minutes to thicken.
- Garnish with fresh basil or parsley before serving.
- Serve the Creamy One-Pot Pasta with Zucchini warm.
