Ingredients

Directions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, mix the vegetable oil and 3/4 cup sugar until well combined. Add the eggs and 2 teaspoons of vanilla extract, mixing until smooth.
  4. Stir in the grated zucchini.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  6. To make the cream cheese filling, beat the cream cheese and 1/4 cup sugar in a bowl until smooth. Add the egg yolk and 1/2 teaspoon vanilla extract, beating until well combined.
  7. Fill each muffin cup about 1/3 full with the zucchini batter. Add a spoonful of the cream cheese mixture on top, then cover with more zucchini batter until the muffin cups are about 3/4 full.
