Cream Cheese Zucchini Muffins are a delightful combination of moist zucchini bread and creamy cheesecake. These muffins are perfect for breakfast, brunch, or as a snack. The zucchini adds moisture and a hint of sweetness, while the cream cheese filling provides a rich and tangy contrast.

For the Muffin Batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini)

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, mix the vegetable oil and 3/4 cup sugar until well combined. Add the eggs and 2 teaspoons of vanilla extract, mixing until smooth.
  4. Stir in the grated zucchini.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  6. To make the cream cheese filling, beat the cream cheese and 1/4 cup sugar in a bowl until smooth. Add the egg yolk and 1/2 teaspoon vanilla extract, beating until well combined.
  7. Fill each muffin cup about 1/3 full with the zucchini batter. Add a spoonful of the cream cheese mixture on top, then cover with more zucchini batter until the muffin cups are about 3/4 full.
  8. Use a toothpick to gently swirl the batter and cream cheese mixture together.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Serve the Cream Cheese Zucchini Muffins and enjoy!
