- In a large bowl, mix the vegetable oil and 3/4 cup sugar until well combined. Add the eggs and 2 teaspoons of vanilla extract, mixing until smooth.
- Stir in the grated zucchini.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
