  • 3 tablespoons unsalted butter
  • 1 package (10 oz.) marshmallows
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 teaspoon vanilla extract
  • 6 cups rice crispy cereal
  • 1 cup shredded coconut (sweetened or unsweetened)
  • Additional chocolate chips and coconut for topping (optional)


  1. Grease a 9×13 inch baking pan with butter or cooking spray. Set aside.
  2. In a large pot, melt the butter over low heat. Add the marshmallows and stir continuously until completely melted.
  3. Add the chocolate chips to the marshmallow mixture, stirring until they are fully melted and the mixture is smooth.
  4. Stir in the vanilla extract.
  5. Remove the pot from heat and immediately add the rice crispy cereal and shredded coconut. Stir until the cereal and coconut are well coated with the marshmallow and chocolate mixture.
  6. Press the mixture evenly into the prepared baking pan. You can use a spatula or the back of a greased spoon to press it down firmly.
  7. If desired, sprinkle additional chocolate chips and coconut over the top and press lightly to adhere.
  8. Allow the treats to cool at room temperature until set, about 1 hour.
  9. Once set, cut into squares or bars and serve.
  10. Store any leftovers in an airtight container at room temperature.
