Ingredients
- 3 tablespoons unsalted butter
- 1 package (10 oz.) marshmallows
- 1/2 cup semi-sweet chocolate chips
- 1/2 teaspoon vanilla extract
- 6 cups rice crispy cereal
- 1 cup shredded coconut (sweetened or unsweetened)
- Additional chocolate chips and coconut for topping (optional)
Directions
- Grease a 9×13 inch baking pan with butter or cooking spray. Set aside.
- In a large pot, melt the butter over low heat. Add the marshmallows and stir continuously until completely melted.
- Add the chocolate chips to the marshmallow mixture, stirring until they are fully melted and the mixture is smooth.
- Stir in the vanilla extract.
- Remove the pot from heat and immediately add the rice crispy cereal and shredded coconut. Stir until the cereal and coconut are well coated with the marshmallow and chocolate mixture.
- Press the mixture evenly into the prepared baking pan. You can use a spatula or the back of a greased spoon to press it down firmly.
- If desired, sprinkle additional chocolate chips and coconut over the top and press lightly to adhere.
- Allow the treats to cool at room temperature until set, about 1 hour.
- Once set, cut into squares or bars and serve.
- Store any leftovers in an airtight container at room temperature.
