  1. Start by preparing the dough. In a large mixing bowl, combine the flour and salt. Gradually add water and mix until the dough comes together. Knead the dough for a few minutes, then add the vegetable oil and continue to knead until the dough is smooth and elastic. Cover the dough and let it rest for at least 30 minutes.
  2. For the filling, in a bowl, mix together the mashed potatoes, cheddar cheese, onion, green chilies (if using), cumin powder, garam masala or coriander powder, salt, pepper, and cilantro. Ensure everything is well combined.
  3. Divide the dough into equal-sized balls. Roll each ball in flour and flatten it with a rolling pin to form a small circle.
  4. Place a portion of the potato and cheese filling in the center of each dough circle. Gather the edges of the dough and pinch them together to seal the filling inside. Flatten the stuffed ball gently and roll it out carefully to a thickness of about 1/4 inch, making sure the filling doesn’t come out.
  5. Heat a skillet or griddle over medium heat. Place the stuffed flatbread on the skillet and cook until golden brown on both sides, brushing each side with a little oil or ghee as it cooks.
  6. Repeat with the remaining dough and filling.
