Ingredients

Directions

  1. In a large pot, combine the rinsed jasmine rice and chicken broth. Bring to a boil over medium-high heat.
  2. Add the chicken breasts, onion, garlic, ginger, star anise, and cinnamon stick to the pot. Reduce the heat to a simmer.
  3. Cover and cook for about 30-40 minutes, or until the chicken is cooked through and the rice is soft and beginning to break down.
  4. Remove the chicken breasts from the pot and set aside to cool. Once cool enough to handle, shred the chicken meat and discard the bones.
  5. Continue to simmer the porridge, stirring occasionally, until it reaches your desired consistency (some prefer it thicker, others more soupy). Remove the onion, garlic, ginger, star anise, and cinnamon stick. Season with salt to taste.
  6. Serve the porridge hot in bowls. Top with shredded chicken, chopped green onions, cilantro, a squeeze of lime juice, a dash of fish sauce, and freshly ground black pepper.
  7. Optional: Garnish with fried shallots, bean sprouts, and sliced chilies for added flavor and texture.
