Carbonnade Beef and Beer Stew is a traditional Belgian dish known for its rich, deep flavors. This hearty stew combines tender beef, caramelized onions, and a delicious beer-infused broth, making it perfect for a comforting dinner.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 4 tablespoons butter
- 3 large onions, thinly sliced
- 3 cloves garlic, minced
- 12 oz Belgian-style beer (like a dark Trappist or Abbey ale)
- 2 cups beef broth
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
- Optional: 1 tablespoon whole grain mustard
Directions
- Season the beef cubes with salt and pepper and toss them with the flour to coat evenly.
- In a large pot or Dutch oven, melt 2 tablespoons of butter over medium-high heat. Brown the beef in batches to avoid overcrowding, ensuring a good sear on all sides. Remove the beef and set it aside.
- Reduce the heat to medium and add the remaining 2 tablespoons of butter to the pot. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 15 minutes. Add the garlic and cook for an additional minute.
- Pour the beer into the pot, scraping up any browned bits from the bottom. Add the brown sugar, apple cider vinegar, bay leaves, thyme, and mustard (if using). Stir well.
- Return the beef to the pot and add the beef broth. Bring to a simmer.
- Cover the pot and simmer gently for about 1.5 to 2 hours, or until the beef is very tender.
- Remove the bay leaves and adjust the seasoning with salt and pepper.
- Serve the Carbonnade Beef and Beer Stew hot, garnished with fresh parsley. It pairs well with mashed potatoes or crusty bread.
