Directions
- In a large pot, place the chicken pieces and add water to cover. Bring to a boil over high heat, then reduce heat to a simmer.
- Skim off any foam that rises to the surface. Add the quartered onion, minced garlic, and oregano. Simmer for about 30 minutes.
- Add the sliced carrots, chopped celery, and cubed potatoes to the pot. Continue to simmer for another 20 minutes, or until the vegetables are tender.
- Stir in the diced tomatoes and jalapeño pepper (if using). Cook for an additional 10 minutes.
- Season the soup with salt and pepper to taste. Remove the chicken pieces, let them cool slightly, then shred the meat, discarding the bones and skin.
- Return the shredded chicken to the
pot and add the chopped cilantro. Stir well and heat through for a few more minutes. 7. Serve the Caldo de Pollo hot. Garnish each serving with avocado slices, a squeeze of lime juice, and additional lime wedges on the side.
