Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • Fresh cilantro, chopped for garnish
  • Optional: sliced black olives, chopped green onions, or diced tomatoes for topping

Directions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  3. Stir in the enchilada sauce, black beans, green chilies, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
  4. Place 4 corn tortillas on the bottom of the prepared baking dish, overlapping as necessary. Spread half of the beef mixture over the tortillas, followed by 1 cup of shredded cheese.
  5. Repeat with another layer of 4 tortillas, the remaining beef mixture, and another cup of cheese.
  6. Top with the remaining 4 tortillas. Spread the sour cream over the top and sprinkle with the remaining cup of cheese.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving.
  9. Garnish with chopped cilantro and, if desired, additional toppings like sliced black olives, chopped green onions, or diced tomatoes.
  10. Serve the Beef Enchilada Casserole warm.
