  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1 cup grated zucchini (about 1 medium zucchini), squeezed of excess moisture
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/2 cup chocolate chips

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, beat together the melted butter and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Mix in the mashed bananas and grated zucchini until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated. Do not overmix.
  6. If using, fold in the chopped nuts and/or chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  9. Remove from the oven and let the bread cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Slice and serve. Enjoy your Banana Zucchini Bread as a breakfast treat, a snack, or a dessert!
